To find a traditionally processed, organic, and premium yellow tea took many years. The cultivar is Jin Ji Zhong (Gold Cock Cultivar) and the elevation of the tea garden is 800m with organic certified farming since 2016. With a gentle, floral aroma, yellow tea is often described as a milder, mellower version of green tea that emphasizes sweet over grassy notes. One can detect green apple, fresh rain, fruity notes and slight sunflower seeds. In recent years, yellow tea has become greener and greener, but we prefer the traditional yellow tea because the roast brings out a nice balance to the delicate freshness. The processing of traditional yellow tea is long and complicated, taking one month from fresh leaf harvesting to processing the final tea. Many tea drinkers prefer the fresh teas that are ready before the Qingming festival, so a lot of yellow tea farmers quit producing the traditional yellow tea. We were thrilled after many years to find this rare beauty, ideal for the warmer months.

Da Hua Ping, Huoshan, Anhui, China - Spring 2025
